French cuisine - pate or terrine?
I'm going to a romantic French restaurant with my other half. The different restaurants' menus I look at either have terrine or pate. I love love LOVE pate and hear terrine is nearly the same thing, just chunkier. I would like to try terrine at some point, but not on this date; this is his first time having French cuisine and want him to like it.

Which is better - pate or terrine?

In my personal opinion I prefer pate. Why? I am really unsure It is just what I go with.

A pate is a spreadable mixture of cooked meat (which you already know)

A terrine is a French food that takes the same meat (could be cut more course) mixture but places it in a dish which happens to be called a terrine. The dish is usually lines with fat. The dish is locks and becomes water tight so that the meat can be poached in hot water.

If you take the meat mixture and put it in a pastry dough and cook it it becomes pate en croute.

In my opinion I would maybe go with the pate for it being a first French meal, I like terrines but having something like a cracker to be able to spread the pate on may be better for a first timer. Terrines are typically just cooled sliced and served, same with pate en croute.

Good Luck

ChefThis did a stellar job in explaining this for you.

As for your first date, go with the pate. Odds are far greater that your date will have tried pate versus a terrine, and familiarity will make for a smooth go of events.

While both can be complex and satisfying in flavor, visual appeal is altogether a different animal.

Pate, can surely be dressed up and I've seen some that really look pretty in loaf form, but when served, look like, well pate.

Terrines on the other hand, given the broad range of ingredients that can be incorporated, can quite easily become both visual and flavorful works of art.

Finally, if all goes well with your date and you really want to have some fun, try making either on your own. Neither is particularly hard to do.

Have fun
